Chef Nick Rabar from Avenue N joined us in the backyard BBQ today making BBQ Chicken Salad and Charred Sirloin Steak Salad.

Ingredients for the BBQ Chicken Salad:

  • 1 pound of Chicken breast (grilled, pulled and chilled)
  • 2 ears of Corn (removed from cob, blanched)
  • 2 stalks of Celery (minced)
  • 1/2 Shallot (julienne)
  • 2 Scallions (minced)
  • 1 small bunch of Parsley (rough chopped)
  • 1/2 cup Yogurt
  • 1/2 cup BBQ Sauce
  • 1 pinch Kosher Salt

Directions for the BBQ Chicken Salad:

  1. Combine all ingredients

Ingredients for the Charred Sirloin Steak Salad:

  • 1 pound sirloin steaks (grilled to medium rare, sliced and chilled)
  • 1 pint Cherry Tomatoes (cut in half)
  • 1/4 Red Onion, (julienne)
  • 2 ears Corn (removed from the cob, blanched)
  • 2 cups whole Arugula Leaves
  • 12-16 whole Cilantro Leaves
  • 1 ounce Apple Cider Vinegar
  • 1/2 ounce Olive Oil
  • 2 Limes (juiced)
  • 2 Scallions (minced)
  • 1 pinch Kosher Salt
