Chef/Owner David Ashworth from Parma Ristorante joins us in the kitchen making their Penne Amatriciana, a zesty take on an Italian traditional dish.


  • 1lb penne pasta
  • 5 cloves garlic
  • 1/2 small red onion
  • 6 strips of crispy apple wood bacon
  • 1/4 cup white wine
  • 2 cups red sauce
  • 1/4 cup chopped basil
  • 1/4 cup chopped parsley 
  • 1/2 cup shredded smoked mozzarella 


  1. Cook penne pasta al dente.
  2. In a saute pan sautee garlic and red onion until golden brown.
  3. Add crispy bacon and sautee for 1 minute.
  4. Then add white wine, then red sauce.
  5. Let simmer for ten minutes.
  6. Then add pasta.
