In the Kitchen: Gluten-Free Vegan Veggie Ramen

We are joined by the Executive Chef of Blackie's Bulldog Tavern, Angie Armenise, making Gluten-Free Vegan Veggie Ramen.

 

Ingredients:

  • roasted vegetable stock
  • thick cut rice noodles
  • pickled onion
  • mukimame (edamame out of the pod)
  • chickpeas
  • avocado
  • compressed marinated Tuscan kale
  • gouchgaru chili oil
  • liquid aminos
  • toasted sesame seeds
  • oven roasted butternut squash

Directions:

  1. Prepare roasted vegetable stock (see recipe below)
  2. Bring veggie stock to a low simmer and season to taste with chili oil and aminos
  3. Add rice noodles and simmer over low heat until soft
  4. Pour broth and noodles into a large bowl and garnish with veggies and toasted sesame seeds

Oven Roasted Veggie Stock

Yield: 1 gallon

Ingredients:

  • 2 large carrots, washed and rough chopped (not necessary to peel)
  • 2 ribs celery, washed and rough chopped
  • 1 large white onion, rough chopped
  • 2 cloves black garlic
  • 2 tsp. black peppercorns
  • 2 bay leaves
  • 1 handful of any other aromatics you would enjoy (chef suggestions: parsley stems, fennel fronds, any fresh herb, fresh turmeric, fresh ginger….)
  • 2 Tbsp. avocado oil
  • salt and pepper

Directions for Roasted Vegetable Stock

  1. Preheat oven to 400
  2. In a large bowl add carrot, celery and onion
  3. Drizzle with avocado oil and sprinkle with salt and pepper
  4. Lay veggies in one even layer on a sheet pan lined with parchment paper and roast 30 minutes or until they are nicely caramelized on top
  5. Pour roasted veggies into a large pot and add black garlic, peppercorns, and bay leaves
  6. Add one gallon cold water and aromatics of your choosing
  7. Simmer over low heat for at least two hours
  8. Strain and use for sipping, soups, hydrating grains like quinoa or rice etc.

***Chef’s Note***

The longer you simmer the broth the more rich and intense the flavors will become. If you have the ability to make a large batch (double the recipe) and allow it to go for 8 or 10 hours on a chilly Sunday, you will be greatly rewarded.
