In the Kitchen: Crispy Sweet Thai Calamari

Chef Juan Rodas of The Beach House joins us in The Rhode Show kitchen to show us how to make their Crispy Sweet Thai Calamari!

Ingredients:

  • 8oz portion of calamari
  • 2oz Banana peppers
  • 2oz Red bell peppers
  • Prepared sweet Thai chili sauce
  • 2oz Cucumber - banana pepper salsa

Directions:

  1. For the sauce, cook and reduce orange juice half way, then add sugar, water and sweet Thai chili sauce and reduce again.
  2. For the calamari, saute banana and red bell peppers, then add sauce. Toss calamari in flour mixture (flour, corn starch, salt and pepper). Fry for 2 minutes. Toss in pan and coat with sauce.
  3. For the salsa topping -- combine roasted red bell peppers, cilantro, cucumber and banana peppers.
