Chef/Owner Pamela Leite of Pazi’s Place joined us in The Rhode Show kitchen to show us how to make their Chourico Hash Benedict.
Ingredients:
- 2 lbs ground chourico
- 6 large potatoes
- 4 tablespoons crushed red peppers
- 2 eggs
- Slice of sweetbread
- Hollandaise sauce
Directions:
- Cut potatoes into small cubes
- Boil potatoes and drain
- In large bowl, mash potatoes and add ground chourico
- Add crushed red peppers and mix well
- Brown chourico hash using small amount of butter
- Toast sweet bread
- Poach eggs
- After browning chourico hash, place on top of sweetbread
- Place poached eggs on top of hash
- Top with hollandaise sauce
