In the Kitchen: Chourico Hash Benedict

Chef/Owner Pamela Leite of Pazi’s Place joined us in The Rhode Show kitchen to show us how to make their Chourico Hash Benedict.
 
Ingredients:
  • 2 lbs ground chourico
  • 6 large potatoes
  • 4 tablespoons crushed red peppers
  • 2 eggs
  • Slice of sweetbread
  • Hollandaise sauce

Directions:

  1. Cut potatoes into small cubes
  2. Boil potatoes and drain
  3. In large bowl, mash potatoes and add ground chourico
  4.  Add crushed red peppers and mix well
  5. Brown chourico hash using small amount of butter
  6. Toast sweet bread
  7. Poach eggs
  8. After browning chourico hash, place on top of sweetbread
  9. Place poached eggs on top of hash
  10. Top with hollandaise sauce
