In the Kitchen: Postal Burger

TV Maitre d’ Joe Zito and Chef John Granata from Post Office Cafe are showing us how to make a Postal Burger!

Ingredients:

16 oz. Butcher’s Grind burger meat (brisket, short rib & chuck)

4 slices sharp cheddar

4 slices thick cut bacon

¼ cup pure maple syrup

2 tbsp. brown sugar

1 tsp. ground black pepper

1 small onion

2 tbsp. olive oil

2 lg. eggs

2 large buns (brioche)

Salt & PepperInstructions:

Lay the bacon out on a sheet pan. Liberally sprinkle black pepper on both sides. Pack brown sugar on the top. Pour maple syrup over. Bake in a 350 degree oven for 25-30 minutes or until bacon caramelizes. Divide burger meat in half and form 2 thick patties. Leave a slight well in the middle. Liberally coat the outside of the burgers with salt and pepper. Heat a cast iron pan on medium high heat. Sear burgers on each side so you have a dark crust. You can bring the temperature of the meat up by finishing in the oven. Remove bacon and let cool. Sauté onions in olive oil until caramelized. Place cheese on burger. Toast the buns. Lastly, fry both eggs sunny side up. Place the burgers on the buns. The bacon next. The onions next, and the egg last. Serve with pickles and homemade fries.
