In the Kitchen: Lobster and Burrata Ravioli

Discover Newport brings us Chef /Owner Stephen Bird from Litl Rhody Pasta k.o. making their Lobster and Burrata Ravioli with Bristol Cream Sauce Braised Asparagus.

Ingredients:

  • Two sheets fresh Litl Rhody Pasta

For the Ravioli

  • 1LB COOKED AND CHUNKED LOBSTER MEAT
  • 2/ 4 OZ BURRATA CHEESE BALL
  • ONE SMALL EGG (SCRAMBLED)
  • ONE TABLE SPOON DRIED CHIVES
  • ONE 1/8 TEASPOON OLD BAY SEASONING
  • PINCH OF GRANULATED GARLIC
  • PINCH OF WHITE PEPPER
  • SEA SALT TO TASTE (IF NEEDED)

For the Sauce

  • 1 CUP HARVEY’S BRISTOL CREAM
  • ½ STICK BUTTER
  • 1 TEASPOON CORN STARCH

For the Braised Asparagus:

  • 1 BUNCH BABY ASPARAGUS
  • 1 CLOVE FRESH GARLIC SLICED THIN
  • 3 TABLESPOONS OLIVE OIL
  • PINCH OF SALT
  • PINCH WHITE PEPPER

Directions:

For the Ravioli

  1. PLACE CHEESE BALLS, EGG, CHIVES AND SEASONING IN MIXING BOWL
  2. MIX TOGETHER, BREAKING UP THE BURRATA AND BLENDING IT TOGETHER
  3. ADD LOBSTER MEAT AND MIX GENTLY.
  4. IF YOU HAVE A RAVIOLI PRESS THEN YOU KNOW WHAT TO DO.
  5. NO PRESS, NO PROBLEM. USE A 5 INCH DIAMETER GLASS OR JAR LID TO MAKE YOUR PASTA CIRCLES.
  6. ONCE CUT, BRUSH OFF ANY FLOUR AND DAMPEN ALL THE WAY AROUND THE EDGE.
  7. PLACE ABOUT ½ OUNCE OF FILLING IN THE MIDDLE AND FOLD OVER IN HALF. USING A FORK PRESS THE EDGE CLOSED. 
  8. BRING A POT OF LIGHTLY SALTED WATER TO A BOIL.
  9. PLACE RAVIOLI IN AND COOK FOR APPROX 10 MIN OR TILL TENDER.

MAKES APPROX 20 RAVIOLI OR 8 BIG ONES

For the Sauce

  • PLACE SHERRY IN SAUTE PAN AND REDUCE TO ½ A CUP
  • ADD BUTTER AND WHIP IT GENTLY.
  • MIX THE CORN STARCH IN A LITTLE WATER.
  • WHILE WHIPPING, JUST ADD A LITTLE STARCH (NOT ALL OF IT) TO THE SAUCE JUST TO MAKE IT SLIGHTLY TIGHT.
  • DONE!

For the Asparagus

  • PEEL AND SLICE YOUR GARLIC.
  • BLANCH YOUR ASPARAGUS IN THE MICROWAVE OR DIP IN THE RAVIOLI WATER FOR 2 MIN.
  • HEAT YOUR SAUTE PAN, ADD THE OLIVE OIL, SALT AND GARLIC.
  • TOSS A COUPLE OF TIMES THEN ADD THE ASPARAGUS.
  • SAUTE TILL YOU LIKE IT!
