Greek Stuffed Peppers

Christine Kitsilis and Alex Kitsilis joined The Rhode Show from Angelo’s Palace Pizza making Greek Stuffed Peppers.INGREDIENTS

2 lbs ground beef 85/15

1 cup chopped parsley

½ cup chopped dill

2 cups chopped scallions

1 teaspoon of minced garlic

1 lg chopped minced white onion

½ cup white wine

¼ cup of olive oil

1 teaspoon of kosher salt

1 teaspoon of black pepper

2 tablespoons of tomato paste

1 cup of tomato sauce

1 cup of rice

1.5 cups of water

Red, yellow, or green peppers

Topped with marinara sauce and mozzarella or feta cheeseSTEPS

-Preheat oven to 350 degrees

-Heat the olive oil in a skillet over medium heat. Place beef and onions in the skillet, season with salt and pepper, and cook until beef is evenly browned.

-Drain grease and mix in wine and tomato puree. Continue cooking for 10 minutes.

-Transfer skillet mixture to a large bowl, and mix in feta cheese or mozzarella cheese, cooked rice, garlic and parsley.

-Stuff the peppers with the mixture and arrange in a baking dish and cover will aluminum foil.

-Bake 30 minutes in preheated oven.

-Remove foil, and continue baking for 10 minutes until stuffing is lightly browned.Online:
