Chef Daniel Whitney of FiRE & iCE in Providence, R.I. shares the ingredients and instructions to prepare the tasty dish, Signature Stir Fry with Mango Garlic Mojo Sauce.
THE INGREDIENTS:
For sauce - Garlic, Olive Oil, Lime Juice, White Vinegar, Italian Seasoning, Ancho Chili Spice, Cumin, Black Pepper, Cilantro, Corn Starch, Fresh Mango, Canola Oil
THE INSTRUCTIONS:
In a stock pot, brown garlic in olive oil until golden brown. Add spices and simmer for three minutes.
Cut Mango into hunks and put into food processor to blend until smooth
Add vinegar, lime juice and mango to the pot and bring to a boil. Simmer for an
additional three minutes.
In a separate mixing bowl, combine corn starch with water and mix until a smooth paste. Stir corn Starch paste into sauce to thicken.
Pour in mixer and mix, slowly adding oil until smooth. Cool.
