Chef Anthony Chiero of Costantino's Ristorante joins the Rhode Show to cook the delicious dish, Lobster Ravioli in Pink Vodka Sauce. The recipe can serve two, is easy to follow, and the end result is a fantastic, pasta dinner.
The Ingredients:
8 lobster ravioli from Venda Ravioli
2 teaspoon butter
2 teaspoon chopped garlic
6 grape Tomato quartered
1/4 cup vodka
1/4 cup chicken stock
1/2 cup heavy cream
1/4 cup marinara sauce (basic)
1/4 cup pecorino Romano cheese
5 basil leaves sliced
3 cooked shrimp
S&P
One gallon boiling water
The Instructions:
1. Saute garlic in butter on medium low heat until translucent
2. Add quartered tomato and lightly sautée
3. Deglaze with vodka and allow to flame
4. Add chicken stock and reduce by half
5. Add cream and reduce by half
6. Add grated Romano to help thicken cream
7. Add marinara, basil and shrimp and heat through out and let sauce rest
8. Add lobster ravioli to boiling water and allow to simmer till pasta is
cooked(about 4.5 minutes)
9. Add ravioli to sauce. Use a little pasta water if necessary to if pink sauce
becomes to thick
