Chef James Mitchell of Castaway Coastal Catering joins The Rhode Show to showcase the delicious, seafood dish, Panko-Crusted Swordfish. The dish is topped with Butter Poached Native Lobster and Pommerey Mustard Beurre Blanc.
THE INGREDIENTS:
Swordfish
Lobster
Butter
Whole Grain Mustard
Panko Bread Crumbs
Seasoning
STEPS:
1. Encrust Swordfish with breadcrumbs
2. Prepare emulsified butter for poaching the lobster (Lobster will be prepared (par cooked, or blanched) prior to arrival
3. Saute then Bake Fish
4. Heat par-cooked Lobster in emulsified Butter Sauce
5. Prepare Mustard Sauce
6. Plate Swordfish, top with Lobster and Spoon Mustard Sauce around....and you are done!
