Chanler bourbon burger

Chef Thomas Duffy of Spiced Pear at The Chanler

We're making Chanler bourbon burger with Chef Thomas Duffy of Spiced Pear at The Chanler.

INGREDIENTS
10 oz. angus patty
2 slices munster cheese
Curly fries
Kaiser roll
House smoked bourbon tomato sauce
24 ripe tomatoes (smoked)
2 sweet onion (smoked)
1/2 cup cider vinegar
1 cup brown sugar
Salt
pectin

STEPS
Season your tomatoes with salt, pepper, and vegetable oil. Place them in the smoker stem side down. Peel your onions leave them whole place the in the smoker. Allow them to smoke several hours.

Remove the tomatoes and skin them.

Take half of the tomatoes and puree them in a food processor, chop the onions and pulse them a couple of times.

Take the onion and tomato puree put it in a pot add the sugar and vinegar reduce by at least half.

Take the other half and crush them with your hands leaving them rough for texture, add to the pot and heat to a simmer.

Taste and the salt to taste, add a little pectin about one tbsp stir to dissolve.

Allow to cool in the refrigerator for as long as possible as the flavor will mellow.
