Stormed in Supper: Meatless Chili

We're making a stormed in supper of meatless chili with Rhode Show co-host Michaela Johnson.

Ingredients:
1 onion
1 can stewed tomatoes
1 can tomato sauce
1 can crushed or diced tomatoes
2 can drained dark red kidney beans
2 cans cannellini beans
Chili powder
Salt
Pepper
Garlic powder
Olive oil
Cheddar cheese
Parmesan cheese
Sour cream
chives
Sicilian bread (pick this up the morning of)
 
Steps:
Saute one chopped  onion with a little bit of oil in a big pot. Here's where you would also add any ground meat if you were doing that. 

Add one can stewed tomatoes, one can tomato sauce, one can crushed or diced  tomatoes, one can whole tomatoes also take an empty can and fill it with water and add that.

Add salt, pepper, garlic powder to taste.

Let that simmer for about 30 minutes. Sometimes it will be sitting for 2 hours, stirring occasionally. The longer you let it sit with the cover off the thicker it will be.

Add 3 cans drained red kidney beans.

Let it all simmer for a while. check it and stir it. add chili powder to taste.

Take the cover off the pot to thicken it better if you want. 

Serve with cheddar or parm cheese on side. also Sicilian or Italian bread. You could substitute kidney beans with drained white cannellini beans and also drained hominy     sometimes chili tastes better the next day. you can also use a crock-pot.  

Also, keep extra cans of tomatoes and beans handy because you can gauge how it looks and add more. Same with spices.

***Add bread for dipping. Make sure you head to the bakery early on game days because they run out!****
 
Toppings include:
Sour cream, cheese, onions, chives
 
--Meat is also optional to add to chili!
