We're making Roasted Atlantic Haddock with Yellow Tomato Relish and Wilted Garlic Spinach with Chef Brian Thimme of Tyler Point Grille.
Ingredients:
9oz haddock
1oz olive oil
1oz white wine
1oz water
pinch salt/pepper
Roast haddock for 10 minutes at 400 degrees.
8oz yellow heirloom tomatoes, diced
pinch salt/pepper
1oz olive oil
2oz shallots
1oz red vinegar
1oz pineapple juice
1oz sugar
1tsp fresh oregano
Sauté shallots and tomatoes in oil until soft.
Add remaining ingredients, simmer 10 minutes until most of liquid is absorbed.
pinch salt/pepper
pinch crushed red pepper
8oz spinach
2oz roasted garlic
Sauté spinach with oil and garlic and spices until spinach is wilted.
Garnish with balsamic reduction and spin of oregano.
