Chef Christine Kitsilis of Angelo's Palace Pizza in Cumberland, R.I. shares the recipe for the tasty Kokkinisto, or Greek Beef Stew.
THE INGREDIENTS:
2 pounds of lean stew beef
½ cup olive oil
2 teaspoons of salt
½ teaspoon of pepper
6 garlic cloves minced
3-4 whole cloves
1 large white onion diced
1 bay leave
1 tablespoon of tomato paste
1 can of tomato sauce
½ cup of white wine
9 cups of water
½ green pepper seeded
THE STEPS:
In large frying pan, brown the meat in hot olive oil. Remove meat from the pan and transfer to a stew pot.
Keep the oil hot in the frying pan. Add onions and saute until the onions are soft. Add garlic and saute one minute. Add ½ cup of white wine and deglaze.
Add tomato sauce, tomato paste and cook for a few minutes.
Add tomato sauce to the meat in the stew pot and stir in salt, pepper, bay leave and cloves. Add 9 cups of water and turn heat to high. When it starts to boil, turn heat down to low and cover let it simmer for 2 hours.
Serve it over rice or pasta.
