We're making Apple Cider Glazed Turkey & Cranberry Meatballs and Pumpkin Whoopie Pies with Dunkin Donut's Heidi Curry and Michael McEwan.
Turkey and Meatballs
Serves 8 to 10
Meatball Ingredients:
1 pound Ground Turkey Meat (we used 99% fat free)
8 oz diced frozen cranberries
1 Dunkin Donuts Corn Muffin
1/4 cup whole milk
2 teaspoons salt
1 teaspoon pepper
2 teaspoons (couple sprigs) fresh sage, chopped
2 teaspoons (couple sprigs) fresh thyme, chopped
1 Tablespoon Canola Oil or Cooking Spray
Glaze Ingredients:
1 large onion, diced
1 medium Dunkin Donuts Apple Cider
4 oz heavy whipping cream
2 Tablespoons Whole Grain Mustard
1 teaspoon salt
1 teaspoon fresh thyme
2 teaspoons canola oil or cooking spray
Two 15-ounce cans white beans, drained and mashed
2 small red onions, diced
3 cloves garlic, minced
2 Tbs. diced and seeded hot green peppers
1 Cup breadcrumbs
Salt and pepper, to taste
1/2 cup olive oil
Steps:
Preheat Oven to 350F.
Remove the paper liner from the corn muffin, break up the corn muffin using your hands into small pieces. Place the corn muffin pieces onto the lined baking sheet. Toast the corn muffin in the oven for approximately 10 minutes until the muffin is golden brown.
In a small bowl, mix together the toasted corn muffin and the whole milk. Mix well
In a medium sized bowl, mix together the Ground Turkey, Cranberries, Salt, pepper, Sage and Thyme. Add the corn muffin /milk mixture. Mix Well.
Shape the Turkey Cranberry mixture into mini meatballs, approximately 1- 1/2” in size.
Heat 1 Tablespoon of oil in saute pan on medium heat, add approximately half of the meatballs to the pan and brown on all sides. Once browned, transfer meatballs to a plate and brown the remaining meatballs in the saute pan.
In a separate saute pan (at least 2 inches deep) heat the 2 teaspoons of oil on medium heat. Add the diced onion and thyme. Cook the onions until they have softened and become slightly golden brown, approximately 10 minutes. Add the Apple Cider, Heavy Cream, Whole Grain Mustard and Salt to the sauteed onions, mix together with a spoon.
Add the browned meatballs to the Apple Cider sauce and allow to cook on medium heat for approximately 1 hour until the sauce has reduced and the meatballs are golden brown.
Serve the Apple Cider Glazed Turkey & Cranberry Meatballs at a party as an appetizer or for dinner along with your favorite side dish.
Whoopie Pies
Serves 25 pieces
Ingredients:
1 box (25 count) Dunkin Donuts Pumkpin Munchkins
1 pumpkin donut
2 8-oz packages of cream cheese
1 small Dunkin Donuts Pumpkin Latte (split in half)
¼ cup confectioners sugar
4 oz heavy cream
Steps:
Slice the Munchkins in half, creating two equal halves and reserve.
In a food processor, add the cream cheese, mix until smooth. Slowly add the confectioners sugar, then half of the pumpkin latte. Crumble the donut into the cream cheese mixture and mix until just combined.
In a small bowl, whisk the 4 oz of heavy cream until you have stiff whipped cream.
Add the pumpkin cream cheese to the whipped cream and gently fold the mixture together.
Place the Pumpkin Cream cheese into a piping bag fitted with a piping tip.
Taking one of the halved munchkins, pipe on the pumpkin cream cheese, cover with the other half creating your munchkin whoopie pie.
Continue with the remaining cut munchkins.
Place the Pumpkin Munhckin Whoopie Pies onto a plate. With the remaining two tablespoons of confectioners sugar, dust the tops of the whoopie pies.
