We're making Drunken Chicken with Grilled Squash with Chef Billy Manzo of Federal Hill Pizza.
INGREDIENTS
For Drunken Chicken:
1 oven roaster chicken
Cajun spices
2 oz of butter
1 (12 oz) can of beer – for steaming
For Grilled Squash:
1 Butternut squash
1 Acorn squash
1/3 cup Vermont maple syrup
2 tsps Cinnamon
STEPS
For Drunken Chicken:
1. Take all packaged insides of chicken out of cavity of chicken
2. Rub outside skin of chicken with butter
3. Shake your favorite Cajun spice mix over the chicken
4. Place chicken in standing position over the can on grill
5. Cook at 350 degrees which is medium heat on grill for 2.5 hours
6. Take off grill and serve!
For Grilled Squash:
1. Cut squash open and remove seeds –
2. Grill face down on medium heat for 20 minutes
3. Plate and drizzle maple syrup and sprinkle cinnamon
