Boca Bella Pizza with homemade Boursin

We're cooking Boca Bella Pizza with homemade Boursin with Chef Billy Wooten of The Corner Cafe.

Ingredients:

6 oz chicken breast
6 medium shrimp
1 broccoli spear, chopped into bite size chunks
handful of black olive slices
1 portabella mushroom cap, diced large
8 oz cream cheese, room temperature
½ teaspoon basil
½ teaspoon oregano
½ teaspoon tarragon
½ teaspoon Tabasco
½ teaspoon minced garlic
pinch salt
¼ cup asiago cheese
6 slices smoked gouda
13 inch pizza crust
 

Steps:

Heat grill pan to high.  Spray with cooking spray.  Grill chicken without moving till grill marks are dark.  Flip and cook through, reducing heat to medium.  Cut into bite sized chunks.  Set aside.

Grill shrimp till pink.  Set aside.

Microwave damp broccoli for 2 minutes.  Cut into bite-sized chunks.  Set aside.  

In a food processor, combine room-temperature cream cheese and spices to make Boursin.  

Preheat oven to 350 degrees Fahrenheit.  

Heat large frying pan with sides to high.  Add in ¼ cup Boursin.  When it is partially melted, stir in Asiago.  When Asiago is mostly melted add chicken, shrimp, broccoli, mushroom and olives.  Toss till coated.  

Distribute evenly on pizza crust.  Top with sliced Gouda.  

Bake in 350 degree oven for 10-12 minutes until Gouda is melted and crust begins to brown.  

Slice and serve!
