We're cooking BBQ ribs with Chef Joe Cozza of Wicked Good Bar & Grill inside Twin River.
Ingredients:
1 cup – Cajun seasoning
¼ cup – cumin spice
¼ cup – mild chili powder
2 – 2 ½ lb racks of St. Louis style ribs
Steps:
Preheat oven to 350 degrees
Put all seasonings in a bowl and cover, then shake until well mixed.
Spread seasoning over both sides of ribs without over coating.
Wrap ribs in saran wrap, then wrap in tin foil. This will keep them from drying out.
Place ribs meat side down on a sheet pan.
Place on center rack in oven and cook for 1 hr and 30 min or up to 2 hours.
When done unwrap ribs and baste top of ribs with Sweet Baby Ray’s BBQ sauce.
